Italian Grilled Pork Chop Recipe - Bistecca di Maiale alla Griglia

In the Tuscan grilled foods pantheon pork chops are second only to the bistecca alla fiorentina. Assuming you plan to serve four people purchase four pork chops weighing about a half pound (200 g) each....

Prep Time: 30 minutes

Cook Time: 30 minutes

Ingredients:

  • 4 pork chops weighing 1/2 pound (225 g) each
  • Salt and pepper to taste

Preparation:

Prepare a hot (you can hold your hand at grill level for 5-6 seconds) fire, set the chops on the grill, turn them after a few minutes, season them with salt and pepper, turn them again and repeat the seasoning, and you're done. The pork should be well cooked (white when you cut into it), but not so cooked as to toughen -- the best way to tell is by feel, and you'll learn to judge the perfect moment with experience. What to serve the chops with? Since pork is relatively sweet, broccoli rabe rifatti will be perfect. The wine? A nice Chianti Rufina.

While we're on the subject of pork, don't forget spare ribs, which are also delightful. You'll want a somewhat lower temperature you would for chops, and then to cook them with care, turning them every now and again, and seasoning them with salt and pepper. It will take between 40 and 50 minutes before they are done, but when they are you'll have finger food fit for the Gods.

Yield: 4 servings Italian grilled pork chops.
