Spicy Calabrian Pork Chop Recipe - Braciole di Maiale alla Calabrese

Calabrian-style Pork Chops, or Braciole di Maiale alla Calabrese: Italians often use fennel seeds to season pork chops. In Calabria they also add hot pepper to give the pork chops added kick. To serve 6 you'll need:

Prep Time: 20 minutes

Cook Time: 20 minutes

Ingredients:

  • 6 pork chops
  • Shredded or powdered hot pepper to taste (Calabrians like things hot, so you can be heavy-handed if you want)
  • Fennel seeds
  • Salt

Preparation:

Lightly pound the chops to flatten them out, dust them with salt, and then rub fennel seeds and hot pepper into them. Grill them over the coals, ideally from olive or grapevine, and serve them hot.

A wine? Because of the hot pepper I'd go with a rich white, perhaps a Ciro' or a Sauvignon Blanc.

Yield: 6 servings spicy Calabrian pork chops.
