Summer Jam Recipe - Confettura d'Estate

By Kyle Phillips, About.com Guide

Summer jam is the perfect way to set summer aside for the winter months! The nice thing about this jam recipe is that you can make it repeatedly as the season progresses, and it will never be quite the same. You'll need:

Prep Time: 40 minutes

Cook Time: 60 minutes

Ingredients:

  • 2 1/4 pounds (1 k) mixed ripe fruit -- prunes, apricots, plums, cherries, peaches, and whatever else is in season
  • 1 3/4 pounds (700 g) sugar
  • An organically grown lemon
  • A cup of water

Preparation:

Wash and pit the fruit, peeling the peaches, and chop the larger kinds into bite-sized pieces. Put them in a pot with the water and the juice of the lemon, and bring the mixture to a boil. Add the sugar and simmer for about an hour, skimming away foam if need be. Transfer the jam into sterile jars, seal them, sterilize them, and put them in your pantry when they have cooled.

Yield: several jars of summer jam.
