Ingredients:
- 1 2/3 pounds (700 g) watermelon
- 1/3 cup (30g) powdered sugar
- A packet of sheets of fish gelatin, or unflavored gelatin sufficient to gel a pint of water
- The juice of a lime
- A pudding tin large enough to contain the ingredients, chilled in the freezer
- More watermelon, finely sliced, for serving
Preparation:
Soak the gelatin in cold water for 10 minutes. While it's soaking, peel and seed the watermelon, cubing the flesh and putting it in a blender. Drain the sheets of gelatin and heat them gently in three tablespoons of water until they melt. Add them to the watermelon in the blender, along with the lime juice and the sugar. Blend well, pour the mixture into the chilled pudding mold, and chill the gelatin for at least three hours in the fridge.Come serving time, dip the mold in hot water, put a serving dish over it, and flip both plate and mold to place the gelatin on the dish. Slice the gelatin and serve it on a bed of watermelon slices.
Yield: 6 servings watermelon gelatin.
