Here's a good recipe to use some of those ripe Cape Cod tomatoes........
Prep Time: 30 minutes
Cook Time: 20 minutes
Ingredients:
- 6 medium-sized ripe tomatoes
- 1/4 teaspoon salt
- 1/8 teaspoon ground pepper
- 3 lbs mussels, uncooked and in shells (see below link to instructions on handling mussels if need be)
- 3/4 cup mayonnaise
- 1 teaspoon chopped fresh dill
Preparation:
Wash and scrub mussels removing any beards. Place into a large pot with one cup white wine or beer. Cover and bring to a boil and simmer for 10 minutes. Remove the pot's cover and cool the mussels to handle. When cooled remove the mussels from the shells to a small bowl.
Wash the tomatoes. Cut off the tops, scoop out the insides, and sprinkle with salt and pepper.
Combine the mussels with mayonnaise and, if desired, any combination including salad dressing, diced celery, sliced green onions, curry powder, bit of cayenne or other spices etc.
Fill the mixture into the tomatoes, top with sprinkles of chopped fresh dill and serve.
