Take apples or pears and roast them or cook them in a pot on the stove, in either case with a little water and some sugar. When they are tender put them through a food mill to obtain a thick purée, and stir in a little powdered cinnamon and more sugar to taste. Strip the crust from day-old bread and cut it into thin square or round slices. Spread a thin layer of the purée over half the slices and cover them with the remaining ones, then beat a couple of eggs with some cream and a pinch of salt, dip the sandwiches in the mixture, and fry them until golden in abundant unsalted butter.
