Radicchio di Treviso Salad Recipe - Insalata di Radicchio di Treviso


A green salad is a classic we're all familiar with, but salads can be much more: They're an excellent foil for creativity, and here we have radicchio rosso from Treviso blending nicely with pine nuts and alici, the smallest, most delicate representatives of the sardine family.

  • 2 1/4 pounds (1 k) Radicchio di Treviso
  • The tender part of the roots of a couple of radicchio plants (They're similar in texture to celery root; figure 1/2 to 3/4 unpacked cup, shredded)
  • 3 tablespoons olive oil
  • Balsamic vinegar (1-2 teaspoons)
  • 8-10 Pickled alici (see note)
  • Pinoli (about a half cup, or to taste)
  • Salt


Alici are closely related to & resemble anchovies, are available in delicatessens, and when fresh are often served as an antipasto; you don't want fish packed in salt or oil. Instructions for preparing them at home if need be.

Clean, wash and shred the radicchio root. Wash the radicchio, shake out the moisture, and shred the leaves to uniform size. Combine the ingredients in a bowl, mix thoroughly and serve. This will do best with a white wine, for example Tocai Friulano. Yield: 4 servings Radicchio di Treviso Salad
