Sicilian Orange Salad, or 'Nzalata D'Aranci Pattuali: This is a classic salad from Palermo, and should ideally be made using a variety of oranges known as melaranci or pattallu, which were brought to Sicily by Arab settlers a thousand years ago.
Prep Time: 10 minutes
Ingredients:
- 6 oranges
- A small bunch of parsley
- Olive oil
- Freshly gorund black pepper
Preparation:
In their absence, use oranges that aren't overly ripe, and thus are tart rather than sugary. You'll need about 6, together with some minced parsley, olive oil, and freshly ground pepper. Peel the oranges and slice them finely, dust them with minced parsley, drizzle a little olive oil over them, and season them to taste with freshly ground black pepper.
Pino Correnti notes, in Il Grande Libro della Cucina e dei Vini di Sicilia, that this salad is the perfect accompaniment to a roast, especially pork. He also notes that in Catania, they make the same salad, using blood oranges, so called because their juice runs deep dark red.
