Oriental Salad with Yogurt Sauce, or Insalata Orientale con Salsa allo Yogurt: This is a fairly elaborate salad that clearly reveals international influences. It will work well as a starter.

Prep Time: 20 minutes

Cook Time: 25 minutes

Ingredients:

  • A head of Roman lettuce
  • 2 leeks
  • 1/4 pound fresh bean sprouts
  • A quarter pound filet of white fleshed fish, such as bass
  • 6 ounces plain yogurt
  • A lemon
  • Olive oil, salt, and pepper to taste
  • A two-tier oriental steamer

Preparation:

Grate the zest of the lemon and set it aside.

Season the fish with salt, the juice from the lemon, and pepper; coarsely chop the leeks, and steam them both in the steamer until the fish is done.

Crumble the fish, and mix it with the lettuce and most of the leeks; season the salad with a thin steam of oil and salt and pepper to taste.

Season the yogurt with the reserved lemon zest, and the remaining leeks, minced. Serve the salad, with the yogurt on the side.

Serves 4.
