Ingredients:
- A chicken breast weighing about a pound (450 g)
- 2 renette apples
- 3 carrots
- The heart of a white bunch of celery
- 1 tablespoon mayonnaise
- 2 tablespoons olive oil
- The juice of a lemon
- 2 ripe tomatoes
- Minced parsley
Preparation:
Boil the chicken breast until done in lightly salted water. In the meantime, peel the apples and carrots, dice them, and shred the celery. Whip the mayonnaise with the lemon juice and the olive oil. When the chicken is cooked cool it under cold water and shred it. Combine the chicken with the chopped vegetables and the sauce, and put the mixture in on a serving dish.
Slice the tomatoes and use them to decorate the salad. Dust everything with the parsley and serve, with a Franciacorta Sec.
Yield: 4-8 servings chicken salad with renette apples.
