Gorgonzola Cream, or Gorgonzola in Crema: This is very simple, and in addition to serving it as a spread, you may want to consider using it to season red meats off the grill. To serve 6:

Ingredients:
- 1/4 pound (100 g) sharp Gorgonzola (the kind that is greener and somewhat crumbly)
- 1/2 cup unsalted butter
- Crackers or saltines
- Cumin seeds to taste (optional)
Preparation:
Remove the rind from the cheese and cream it with the butter, working the mixture until it is smooth and soft. Give the mixture the shape you prefer, for example a cube or dome, dust it with the cumin seeds if you're using them, and chill it well before serving it.
