Fried Dried Tomatoes, or Pomodori Secchi Fritti

Dried tomatoes are quite common in southern Italy, and are enjoyed both as antipasti or snacking foods, and as ingredients. Trapanesi give them a delightful added twist when they make fried dried Tomatoes. To serve 4 you'll need:

Prep Time: 15 minutes

Cook Time: 10 minutes

Ingredients:

  • 16 dried tomatoes, packed in oil, drained and patted dry
  • A bunch of basil, shredded
  • 4 heaping tablespoons breadcrumbs
  • Salt and pepper to taste
  • 1 clove garlic, minced
  • 2 tablespoons freshly grated pecorino romano
  • 1 tablespoon of olive oil
  • About a cup of oil for frying
  • 8 wooden toothpicks

Preparation:

Combine the breadcrumbs, pecorino, minced garlic, shredded basil, and olive oil, and season the mixture to taste with salt and pepper. Distribute the mixture evenly over half the dried tomatoes, and cover them with the remaining tomatoes, using the toothpicks to join them.

Gently fry the tomatoes in hot oil for a few minutes, turning them once when they're half done.

yield: 4 servings fried dried tomatoes.
