Prep Time: 15 minutes
Cook Time: 15 minutes
Ingredients:
- Zucchini
- Salt
- Flour
- Oli for frying
Preparation:
Choose fairly long zucchini, trim off the ends, and slice them lengthwise into 1/8-inch or so slices. Cut these strips into 1/8-inch strips in turn, so as to end up with long matchsticks. Put them in a skillet, salt them, and let them sit of at least an hour to give the salt time to draw moisture from the zucchini. Come frying time take them a few at a time, pat them dry, gently dredge them in flour, and bounce them on the wire mesh of a strainer to get rid of the excess flour. Fry them until lightly browned and crunchy.
