Zucchini with Cheese, or Zucchine al Formaggio: A simple, quick summery dish. To serve 6 you'll need:

Ingredients:
- 5 medium-sized zucchini
- 1/2 cup (100 g) melted unsalted butter
- 1 cup freshly grated Parmigiano
- Salt and white pepper
Preparation:
Trim the pips from the zucchini and slice them lengthwise into 1/8 of an inch (3 mm) slices; should the zucchini have large seeds remove them. Cook them briefly in lightly salted water, removing them while they're still firm, drain them well on a cloth, and transger them to a serving dish. Drizzle the melted butter over them, followed by the cheese, and serve.
