Thin Flattened Strands, Rather Like Tagliatelle, But Without Eggs



Bavette, long thin strips for fairly liquid sauces.

Bavette are similar to tagliatelle, in other words narrow flat strips, but they contain no egg. They're delightful with creamy sauces, for example pesto or creamy tomato sauce.

Practical Things: They're about 10 inches (25 cm) long, 1/15th of an inch (1 mm) thick, and about 1/4 inch (5 mm) wide.
Cooking time: About 8 minutes.
Substitutions: Tagliatelle, linguine, spaghetti.
